For the marinade - lemon, smashed garlic, tajin spice blend, paprika, Mexican oregano salt and pepper with oil.
Marinade the seitan for 30 min,
Remove the seitan in order to air fry it.
Then, add some cornstarch and thicken the marinade into a sauce, Toss the seitan bits back into the sauce.
